Pumpkin Chocolate Chip Muffins


 

Cooler weather has arrived here in Maine, and we are enjoying all the wonderful flavors of fall! You will be feeling warm and cozy with each bite of these pumpkin muffins.

Preheat the oven to 350


Grease a 12-count muffin pan with non-stick cooking spray, or use muffin/cupcake liners.


Ingredients


Muffins

2 eggs, room temperature

1/4 cup sour cream

1/4 cup whole milk

1/4 cup unsalted butter, melted

1/4 cup unsweetened apple sauce

1¾ cup all-purpose flour

3/4 cup sugar

1½ teaspoons cinnamon

1 teaspoon pumpkin pie spice (or 1/4 tsp each of cinnamon, ginger, clove, and nutmeg)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1½ cups of semi-sweet chocolate chips (I use the "grand" size)


Crumb Topping

6 tablespoons unsalted butter, melted

3/4 cup all-purpose flour (if the mixture seems too wet, add 1 extra tablespoon of flour)

1/3 cup brown sugar

3 tablespoons sugar

1 teaspoon cinnamon

pinch of salt


Steps


1. In a medium mixing bowl, use a fork to combine the following ingredients-

1/4 cup sour cream

1/4 cup whole milk

1/4 cup unsalted butter, melted

1/4 cup unsweetened apple sauce


2. In a large mixing bowl, whisk together the following ingredients-


1¾ cup all-purpose flour

3/4 cup sugar

1½ teaspoons cinnamon

1 teaspoon pumpkin pie spice (or 1/4 tsp each of cinnamon, ginger, clove, and nutmeg)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt


3. Pour the pumpkin mixture into the dry ingredients. Use a fork or spatula to stir the ingredients until just combined. Do not overmix.


4. Add 1½ cups of semi-sweet chocolate chips. Fold in using a spatula until just combined. *You may reduce this to 1 cup or use a different blend of chocolate.


5. Scoop the batter into the prepared muffin cups.


6. Combine all of the crumb topping ingredients in a small bowl. Stir together to form small crumbles that resemble wet sand. Divide the crumb mixture evenly on top of each muffin.


7. Bake at 350℉ for 22-24 minutes. Allow to cool slightly before serving. Muffin liners may stick to the hot muffin, so give it a bit more time before serving.
